Cheese - Day 9 - Ending in Twizel
At a approximately 8:23 I awoke to the sound of a family rushing to get out the door. There were noises of zips on suitcases opening, cutlery clinking and clanking against porcerlain and mild chatter from the parents. After a short while of getting ready to leave we finally did. A short drive in the car down the road was all it took to make it to the Whitestone Cheese Cafe. We were waiting for a while until the cheese tour guide put us in his white van and drove us down the road. Once there we headed into the conference room where a couple from Brisbane was awaiting us. In the conference room were lots of slabs of wood. These "slabs" of wood were actually trophies and awards on how good their cheeses are. On this tour, there was the tour guide, a family of five, and two couples - one from brisbane the other was from south korea. A couple minutes later, we were all seated with our high vis vests on and watching a video on how cheese is made. After a short walk we had made it to the first phase.

Phase 1:
In this phase the milk is poured in vats and has the culture and the rennet added. Then the milk is moved around in these vats seperating the curds from the whey, after this they are then weighed and placed into molds and has pressure added. Then the cheese is then put into a salt brine for 24hrs.
Phase 2:
In this phase the cheese are put on racks and rotated a quarter turn twice every week by hand. After this the cheese is either packaged or dunked in wax and ready to go to your front doorstep.
After the main cheese factory tour we hopped back into the van and arrived back at the deli/store where a cheese tasting menu was waiting for us,

It also came with a gift bag with an information booklet about cheese, a pen, and a block of a mystery cheese
Cheese was enjoyed. we went back into the diner to have more cheese. after some dietary complications, had our food and enjoyed it. After feeling abit cheesed out we decided to go to the rainbow confectionary store. In the store were lots of lollies, but the ones that caught our eye were the seconds (these are lollies have gone wrong) these are at a discounted price. We then got petrol and headed into the Oamaru visitor centre. Before that we went to steampunk HQ and bought some gifts and made the props come to life. We had arrived at the visitors centre.

In there we had a go at croquet, we were quite bad apart from one shot i made, where i made it clean through the hoop. We then dressed up as posh old victorian people and sat on a horse and carriage. we then hopped on a penny farthing carousel. A quick ride later we tried our luck at barbering, and finding out the cruel punishments of schooling. We then tested an old victorian couch and left the Oamaru visitors centre. The weather was sub par at best, which made everyone a bit flustered and reluctant to exit the vehicle to look at rocks and maori cave art/paintings. After a fun car ride of karaoke and conversations we had made to Duntroon. With half an hour to spare we made it to the Vanished world centre. In here there were lots of fossils from the sorrounding area, like a dolphin that looked like a crocodile. In the other room there were rocks lots and lots of rocks. You could even say rocks rock. The last room was an excavation site and where you could practise the art of paleontology. As we were about to leave, dad noticed the postcards looked similar to his dad's christmas cards. It turns out it was the same artist, Huh such a small world we live in.

A short while later we had finally made it to Twizel. After we had unpacked, we made dinner and dessert. dinner had some complications because the hob wouldn't spark and keep the flame. Dinner was good dessert was better. Then it was off to bed.
